The New Diet
Not knowing if i have Lyme or not is frustrating. Even more frustrating is gluten free baking.
Hi there,
I have been on the antibiotics for about a week now. No change from what I can tell except my excessive gagging has gotten worse (ever since about half way through my england trip, I will start gagging half way through a meal and feel like I want to throw up). Recently I've been feeling gag-y constantly. Which is a real joy.
Of course, I can't just sit back and rely on the meds. So I've had to make some changes. Since monday i have been eating gluten free and low sugar. And it's hard. I hate it. But many lyme (and fibromyalgia) suffers have said it helps, so I'm giving it a shot.
This would be a lot easier if I wasn't addicted to carbs and sugar. I love all of it. Truth be told I'm not the healthiest eater ever. My sweet tooth is far louder and more demanding than my veggie teeth. I love eating out (My bank account doesn't though) and I have a standard order at most fast food joints. (Sidebar: Do you think Mcdonald's would serve burgers without the bun or am I better to just take it off when I get it?)
I am currently waiting for my gluten free, low sugar cookies to come out of the oven. (and my low sugar i mean the only sugar in them is in the semi sweet chocolate chips.) The dough was gross. The chocolate chips are probably all that's worth eating.
Update: Cookies have very chalky texture. Very soft. Almost like shortbread but more likely to fall apart. Not so bad on the sweetness (Used Truvia instead of sugar) Not the greatest thing in the world. But these chocolate chips are the first sugary thing I've eaten all week and they're heavenly.
I think it'd be easier if it was just gluten I was cutting but then I'd still find ways to eat waaaaay unhealthy and the point would be lost.
I dont think I am able to give up ice cream though, so I may never get to a sugar free diet.
