Good days, bad days and cooking adventures
I make sugar free sugar cookies, and they aren't half bad!
Hey everyone,
The end of last week I had some completely out of character good days. No pain, no fatigue. So of course I over did it. I spent all day shopping with my family then went out again to help grocery shop. I cleaned my room. I did a whole lot of stuff and then the weekend came. And I was exhausted. and my right hip was in significant pain. I had to get the heating pad out and everything. I even had to cancel plans with friends cuz the nausea had come back (luckily no vomiting). These friends are truly awesome because Ive missed hanging out with them several times and they totally understand. I dont deserve good friends like them.
The diet is going well. I eat a lot of rice vermicelli and a lot of spring rolls. I love them and theyre fun to make. Its also a good way to get those veggies into me.
Today I baked sugar cookies. But Im supposed to be avoiding sugar, so I used agave syrup instead. Its not a 1:1 ratio because agave is much sweeter and has lots more calories. They're pretty good. Not like real sugar cookies, but probably the best thing I have baked that's gluten free. The recipe said to roll into balls to bake, that they'll flatten out in the oven. They didn't. and are still kinda doughy in the centre. Still okay, but the bigger ones didnt cook all the way through.
Right now I have a lemon poppyseed loaf in the oven. It overflowed and the oven is now all smokey. Mom insists it should have been in two pans but the recipe said one. Maybe I should start making my own recipes from scratch and hope for the best... recipes seem to be screwing me over.
I think Im going to have to scrap the loaf which is very upsetting. Failure is hard for me because I can't help expolating it to my life.

UPDATE: the loaf survived! Another 5 minutes and it actually baked. It tastes better than the cookies! Definitely making that one again, but maybe in 2 pans next time...
